Well for Eiji there is also a kind of foul proof strat. You have to make him jump at you (usually after he taunts you) and either hardkick him or use the f,b,f +P or K move with one of the 3 main heroes. Then walk back a bit and repeat. You can also try to follow up with a fireball when he gets up. For me, Takuma is the hardest.
